Raw Tomato Soup
What to do with loads of tomatoes on a hot summer’s day? Make cold tomato soup. No cooking time, no heat in the kitchen, loads of enzymes and flavour!
Half fill the blender with roughly chopped tomatotes, and some capsicum too if you have it. I only had green capsicums, but red works as well.
Add a small clove of garlic, roughly chopped.
Throw in a handful of basil leaves. I used lemon basil, which tasted delightful.
Add a tablespoon or so of hemp seeds, for good oils and protein.
Add half a teaspoon of seasalt – I scraped this off the rocks at the beach myself.
Blend briefly to make a smooth soup.
For a robust flavour, you need a few sun-dried tomatoes, or some tomato paste, or some good oils. I gave mine a good drizzle of avocado oil, straight into the bowl. You could also use virgin olive oil, organic cream or chunks of avocado. If you have sundried tomatoes, blend them in with the rest of the ingredients. Grind some pepper over it if you like.
